Addicted to chocolate and cannot have enough of it? Well, we bring you few recipes of desserts and sweets exclusively made with rich chocolate for satiating your infinite carvings for the Food of Gods, i.e. The Chocolate.
We start with an all-time favorite dessert, the chocolate mousse with a hint of rum, a tang of cherries and a whiff of coffee. We give you the ‘Rum, Coffee and Cherry Chocolate mousse’.
What do we need to make our Rum, Coffee and Cherry Chocolate Mousse?
300 gms dark chocolate.
2 eggs ( separated whites and yolks)
30 ml dark rum (preferably Old Monk)
2 tablespoons unsalted butter
4 tablespoons powdered sugar
1 table spoon strong coffee powder
10-15 deseeded and roughly chopped canned cherries
pinch of salt,
30 ml heavy cream and vanilla essence.
For the garnishing we need; 100 ml whipping cream, 10 ml dark rum, 1 tablespoon powdered sugar, cocoa powder.
How do we make our Rum, Coffee and Cherry Chocolate Mousse?
We start by melting the chocolate with butter and coffee in a bowl set over a pan of simmering water.
Remove the chocolate mixture from the heat and stir in the rum and the chopped cherries and keep it aside.
Whisk the egg yolks with sugar and vanilla essence in a bowl over a pan of simmering water and cook them lightly until they become foamy.
Combine the egg yolk with the chocolate mixture stirring them together gently.
Beat the egg whites with a pinch of salt until soft peaks form and beat in the sugar combining it to the earlier mixture.
Beat the whipping cream until soft peaks form and add to the mixture. Combine well and divide among serving glasses.
For the garnish, whisk together the whipping cream, rum and sugar together until soft peaks form and spoon it over each serving glass. Dust with cocoa powder and refrigerate overnight.
Moving ahead we indulge in the world of French Cuisine and offer you the Chocolate Pots de Crème. This pot of cream is a traditional French custard dessert typically served in a pot shaped cup and is quite super silky and dense in texture.
What do we need to make our Chocolate Pots de Crème?
For garnishing: Heavy cream and cocoa powder.
How do we make our Chocolate Pots de Crème?
Melt together the normal and dark chocolate in a heat proof bowl over simmering water and keep aside.
Bring the milk, sugar and cream to a boil stirring together in another saucepan over medium heat.
In a heat proof bowl, whisk together the egg yolks and add gradually half of the hot milk, cream and sugar mixture into it over a low flame stirring for 5 minutes.
Add the egg yolk and milk mixture back to the remaining hot milk and stir gradually till it reaches the consistency of a thick sauce.
Pour the milk and egg mixture over the melted chocolate and mix thoroughly off the heat until smooth.
Pour the mixture into small glasses and refrigerate for 2 hours. For garnishing, whisk together the chilled heavy cream and cocoa powder together until soft peaks form and spoon it over each Pots De Crème before serving.
Next we pick a classic dessert which is generally had during evening tea. We bring you the classic Fudge Walnut Brownie. These brownies are sure to win you hearts because of their fresh intense chocolaty rich aroma and melted dark chocolate in each bite.
What do we need to make our classic Fudge Walnut Brownies?
100 gms flour
1 cup sugar
1 cup cocoa powder,
½ cup brown sugar
½ tea spoon baking powder
¼ tea spoon salt
1 cup dark chocolate roughly chopped and divided
½ cup milk
50 gms unsalted butter
1 teaspoon vanilla essence
2 eggs beaten and ½ cup walnuts roughly chopped.
How do we make our classic Fudge Walnut Brownies?
Pre heat the oven to 200 degrees. Combine the flour, sugar, cocoa powder, brown sugar, baking powder and salt together in a large bowl.
Heat one part of chocolate and milk on a medium flame stirring gradually.
Add in butter, vanilla essence and beaten eggs to the chocolate and milk mixture.
Add the milk mixture, remaining chopped chocolate and chopped walnuts to the flour mixture and stir to combine to form a thick batter.
Rub some butter on to a baking dish and pour the batter into it. Sprinkle with some chopped walnuts on to the batter filled baking dish and bake for 20 minutes or until moist crumbs cling to a spoon inserted in the brownie.
