Ramzaan or Ramadaan, as a few of us call it, is a sacred month to celebrate the generosity of mankind; to maintain a control over our worldly desires and not feed the fire of the demon inside us. I have always admired the determination required to keep a month long roza. However, more than that I am fond of the regal food display during iftiyaari. Food is the highlight of my life and I am not ashamed to admit that I have often been bribed by it. So, when recently I was invited to an iftiyaari party by my friend Parvez Alam, I grabbed the invitation before he could change his mind. It was a close family affair and each individual was dressed in traditional attires. When Parvez begin to tell me about the rituals in detail, I got distracted by the aroma emerging from the kitchen. Not my fault! I need good food to maintain my round size!!! What waited were deep culinary secrets and finger-licking Ramzaan recipes. Below you will find two delecious Ramzaan recipes that are quick to make and have great nutritional value. These recipes can be used in many ways and made on multiple occassions. So just make it and indulge in the best part of life i.e. FOOOOOOD!

Multipurpose Salad

INGREDIENTS

  • Greek Yogurt – 1 cup

  • Fresh Lemon juice – 1 lemon juice

  • Green Chilli – 3

  • Garlic – 2

  • Corn – 1 cup

  • Potato – 2

  • Salt as per taste

  • Sugar – 1.5 tablespoon

  • Black Pepper as per taste

  • Olive oil – 1 table spoon

  • Rosemary/Green Onion/Dil for garnishing

DIRECTIONS

  1. Boil potatoes and corn with salt and sugar

  2. Add yogurt, olive oil, green chillies and garlic

  3. Freeze it for at least an hour before serving

Tips from my kitchen

  • Mash the potatoes and use the filling to make dahi kebabs

  • Add fried rice to the salad and you have instant pilaf

  • Cook the pasta and add to the salad. Voila! Your pasta salad is ready to be served.

  • You can always add nuts, cheese and more vegetables

Shahi Khajoor Shake

INGREDIENTS
(Serves 2)

  • Dates – 12

  • Milk – 1 cup

  • Cream – 1 cup

  • Saffron – a few strands

  • Ground Nutmeg – 1/8 teaspoon

  • Cinnamon – a pinch

DIRECTIONS

  1. Boil the milk and soak the pitted dates in it to soften them

  2. Put all the ingredients in the blender and blend them

  3. Let it chill in refrigerator and serve chilled

Tips from my kitchen

  • You can add nuts and banana to make it richer

  • Put it in the moulds and you can indulge in shahi kulfi

  • Are you a serious health buff? Put in oats

  • For a healthier b=version you can replace milk and cream with yogurt
