Meeting friends after a long time is always so delighting, but this time when I met an old friend I was surprised with the way she looks now. Her skin was so radiant and she looked at least 3 kilos down. Later, she admitted to eating salads daily and once in a while replacing it with her regular dinners. Isn’t it a simple mantra to change the way you look and feel?

Salads incorporate fruits, vegetables, cooked meat, eggs, pulses, grains, cheese and so much more; each packed with their share of goodness. Salads are not only good for those who wish to lose some pounds but for everyone; their fibre content prevents constipation while the antioxidant content (such as folic acid, vitamin C, vitamin E and carotene) makes your skin look fresh and glow naturally.

Choose ingredients of your choice and go all creative to create your tangy or sweet favourite!

1. Baby Corn and Beans Salad

The lemon and basil dressing used in this salad are an excellent source of vitamin C, which also aids in the absorption of iron. In case you cannot find fresh basil, you can substitute it with ¼ teaspoon of dried basil.

Preparation time: 10 mins


  • 1/2 cup spring onion (chopped)

  • 1/2 cup fresh mushroom (blanched and sliced)

  • 1/2 cup baby corn (blanched and cubed)

  • 3/4 cup bean sprouts (moong dal)

  • 1/2 cup capsicum (red and green, cut into cubes)

  • 1/2 cup cucumber (cut into cubes)

For The Dressing

  • 1 tsp olive oil

  • 3 garlic cloves (finely chopped)

  • 1 tbsp fresh basil leaves (finely chopped)

  • 2 tsp lemon juice

  • 1 sachet sugar

  • Salt to taste

For the dressing:

1. Heat the oil in a non-stick pan and add garlic

2. Sauté till it turns light brown

3. Add basil leaves and mix well

4. Let it cool completely

5. Add lemon juice, pepper, sugar substitute and salt and mix well


1. Combine all the above ingredients in a salad bowl and toss lightly

2. Refrigerate for about an hour

3. Just before serving, add the dressing to the salad and toss well

4. Serve immediately

2. Beans and Capsicum Salad

This yummilicious Beans and Capsicum salad is generously loaded with fibres, proteins and other essential nutrients such as calcium, zinc, iron and vitamin C. So, this salad can be a reason for healthy skin along with strong teeth, bones and hair.

Preparation time: 20 mins


  • 1 1/2 cups Kidney Beans (soaked and boiled)

  • 1 1/2 cups White Chick Peas (soaked and boiled)

  • 1 red capsicum

  • 1/2 tsp oil (for brushing)

  • 1/2 cup onion (finely chopped)

  • 1/4 cup coriander (finely chopped)

  • 1 1/2 tbsp lemon juice

  • 2 tsp green chillies (finely c hopped)

  • 1/2 tsp red chilli powder

  • Salt to taste


1. Evenly brush oil over a capsicum and pierce a fork through it

2. Roast on all sides on a low flame till it turns black in colour

3. Immerse the capsicum in cold water and remove the burnt skin along with the stem and seeds

4. Chop it into small cubes

5. Combine all the ingredients in a salad bowl and toss well

6. Refrigerate and serve chilled

3. Bread Salad from Italy

This super-quick salad can be prepared with a handful of ingredients and is ideal for anytime snacking. For a healthy and low calorie between-meals munching in the office, you can prepare this salad in a jiffy.

Preparation time: 15 mins


  • 1 clove garlic (peeled)

  • 2 tomatoes (chopped)

  • 1 cucumber (chopped)

  • 1 small red onion (chopped)

  • 1 clove garlic (minced)

  • handful fresh basil (chopped)

  • fresh thyme (chopped)

  • One (500g) loaf bread

  • 4 tablespoons extra virgin olive oil

  • salt to taste

  • 2 tablespoons balsamic vinegar (optional)


1. Take a wooden salad bowl and rub a peeled garlic clove in this bowl

2. In this prepared salad bowl, combine red onion, tomatoes, cucumber, garlic, herbs and salt to taste

3. Toss thoroughly and allow it to sit at room temperature for about 10 minutes (so that the vegetables release water)

4. Chop bread slices into small cubes

5. Add bread pieces into the salad bowl and mix thoroughly

6. Before serving, add just enough vinegar and olive oil to lightly coat the ingredients
