Pie! Even the Mathematics haters love this pie, because the only calculation involved here is how soon you can lap it all up. However, in Indian pie is not a very easily available dessert in the bakeries. This doesn’t mean that you don’t enjoy the yummness of this tempting sweet dish. Right from preparing pie crust at home to making yummy cheesy pies is now possible in a short time.

Before we get started, always remember to use cold water only when working to make a pie. You shall prepare and refrigerate till 2 months for ready-to-use, but make sure it is well-wrapped before you store.

Pie Crust Recipe

Ingredients to make a pie crust:

  • 1 cup all-purpose flour

  • 1/2 teaspoon salt

  • 1/3 cup vegetable shortening

  • 2 tablespoons cold water (Add 1 additional tablespoon water as needed)

Preparation to make a pie crust:

Mix flour and salt in a medium size bowl. Add vegetable shortening using a pastry blender until mixture turns crumbly. In between sprinkle water and blend until mixture holds together.

Prepare the dough into a soft ball and roll it out on a lightly floured surface to 1/8-inch thickness.

Line this pie plate with aluminium foil and weight it down with dry beans or something so that the bottom doesn’t get puff. Crimp the edge of the pie as desired.

Bake for 10 minutes and remove the beans and again bake for 10-15 minutes until it turns golden. Remove and leave it to cool completely before filling.

Cheesy Mushroom Pie Recipe

There is a certain allure with cheese for kids and adults alike. As we grow into adulthood, we deny ourselves this little joy for the prospect of cholesterol free heart. But then, it is okay to indulge once in awhile. Baking a Californian pie is really simple with garlic, cheese, eggs, parsley, sour cream, and a whole pound of mushrooms. Great for breakfast or evening snack alike, kids would love it. It’s pretty easy to make, especially if you have an extra pie crust all ready to go.

Preparation Time: 45 mins

Yields: Serves 4-6

  • 1 one frozen pie crust – As shared above

  • 1 cup grated cheese

  • 1 lb sliced mushrooms

  • 1 Tbsp red paprika

  • 1 Tbsp chopped fresh parsley

  • 1 large clove garlic, minced

  • 1/2 cup cream

  • 1/3 cup milk

  • 1/3 cup sour cream

  • 2 eggs, lightly beaten

  • A pinch of cardamom or nutmeg (optional)

  • 2 Tbsp butter

  • Salt and pepper


  1. Heat the pan and add butter on a low heat. Now, add mushrooms once the butter melts. Stir mushrooms to coat with butter and increase the heat. Keep stirring until the moisture in the mushrooms gets evaporated. Bring down the heat to low, add chopped red paprika and sauté for few minutes before adding minced garlic; stir for 3-4 minutes till the garlic turns soft and then remove from the stove.

  2. Take a bowl and add the eggs, milk, sour cream and cream and blend them together to a nice paste. Now add a pinch of salt, freshly ground pepper, powdered cardamom or nutmeg for flavour (optional), grated cheese and chopped parsley and mix properly.

  3. Fill the bottom of the pie crust with the sautéed mushroom. Add the mixture of cheese and blended cream over the mushrooms. Allow it to bake in the oven for 30-35 minutes till it turns brown on the top.

  4. Insert a knife in the middle part to check whether it is fully cooked. If comes out clean without being sticky. Slowly remove it from the oven and let it cool for 10 minutes before serving.
