Ingredients

  • Cooked rice – 2 cup
  • Carrot (Grated) – 1
  • Boiled Potato (Mashed) – 1
  • Bread – 4
  • Besan (Gram Flour) – 3 tsp.
  • Green Chillies (Finely Chopped) – 3
  • Chilli Powder – 1 tsp.
  • Tomato Juice – 4 tsp.
  • Coriander (Finely Chopped) – ½ cup
  • Beetroot (Grated) – 1/4
  • Onion (Finely Chopped) – 2
  • Corn Flour – 2 tsp.
  • Garam Masala – ½ tsp.
  • Salt
  • Oil – For Frying

Preparation:

  • In a large bowl combine all the ingredients and spices
  • Mix well and if required add a little water to make the mixture smooth
  • Now, make small balls and flatten them between your palms
  • Heat enough oil for frying and fry the patties on medium flame till golden brown and crisp

2. Leftover Rice Paratha

The easiest way to turn the leftover rice into something interesting is by further seasoning it a bit and using it as a stuffing for parathas – the most popular Indian breakfast dish.

Ingredients

Dough:
Wheat flour – 1 cup
• Ghee – 1 tbsp.
• Salt


Stuffing:
• Cooked Rice – 1 cup
• Cumin Seeds – 1 tsp.
• Onion (Finely Chopped) – 1
• Ginger Garlic Paste – 1 tsp.
• Green Chillies – 1 tsp.
• Chilli Powder – 2 tsp.
• Turmeric Powder – ¼ tsp.
• Coriander (Finely Chopped) – 1 tbsp.
• Mint Leaves (Finely Chopped) – 1 tbsp.
• Salt


Others:
• Oil
• Curd

PREPARATION
Dough

  • Take a large bowl and combine all the ingredients well and using enough water knead into a soft dough
  • Keep it aside for about half an hour

Stuffing

  • Heat a tsp. oil in a pan and add cumin seeds
  • Let the cumin seeds sputter, now add onion and cook until golden brown
  • Now, add the ginger-garlic paste and cook till fragrant
  • Add the green chillies, turmeric powder, chilli powder, salt, and cooked rice
  • Mix well and cook for another minute or two
  • Once done, add chopped coriander and mint and leave it to cool completely

Method:

  • Divide the dough into 8 equal parts and roll out one of the portions into a small circle
  • Place a spoonful of the stuffing in the centre and bring together all the sides
  • Carefully seal it and flatten it by pressing lightly with fingers
  • Now, roll this into a roti (about 5-inch diameter)
  • Place it on a hot girdle (tava) and cook on both sides using a little oil
