How to make Eggless Choco-Chip Amaranth & Oats Cookies

It must be many-many years ago when I first came across a Cookie outlet in shopping-malls & being charged exorbitant prices for that one cookie. I never imagined at that point of time, that one day I would be baking similar cookies or people would be reading about my recipes.

But here I am with a cookie!

Prep Time: 15 minutes

Cook Time: 10 minutes

Total Time: 25 minutes

Yield: 2 dozen cookies

  • 140 grams of all purpose flour

  • 30 grams of rolled oats (Instant Cook type)

  • 30 grams of amaranth flour

  • 120 grams of unsalted butter

  • 125 grams of powdered sugar

  • 1 teaspoon of pure vanilla extract

  • 1 teaspoon of baking powder

  • 1/2 teaspoon of baking soda

  • 4 tablespoon of semolina

  • 100 grams of chocolate chips

  • 1-2 tablespoon of milk (optional, if required)

  1. In a large bowl, sieve together flour, amaranth flour, semolina, baking powder and baking soda. Set aside.

  2. In another large bowl, beat together butter & powdered sugar till it turns light & is fluffy. Add vanilla extract. Beat for 2-3 more minutes.

  3. Add sieved flour mixture & oats to wet mixture slowly using your fingertips. It should resemble like bread crumbs. Slowly knead a soft dough using your hands. Add little milk, if required to bring the dough together.

  4. Wrap the prepared dough in cling wrapper & place it in freezer for 1/2 hour or overnight in refrigerator.

  5. 15 minutes before you are ready to bake, preheat the oven to 180 C and grease a baking tray.

  6. Remove the dough from fridge; allow it to soften a bit if it is too hard and then roll in chocolate chips kneading it slowly again.

  7. Make small balls from the dough and gently flatten them by pressing, into discs.

  8. Place these dough-discs onto the prepared tray 1 inch apart from sides & each other.

  9. Using a fork or knife, pierce the upper layer of cookies making small indentations on. You can add some chocolate chips on top, if you like.

  10. Bake for 9-12 minutes till golden brown or done.

  11. Cool on a wire rack completely. Store them in an air-tight container.

Notes:

You can use only all-purpose flour & replace the quantity of amaranth flour with oats or all purpose flour.

You can also substitute 50% of all purpose flour with whole wheat flour to make them healthier.

You can substitute powdered sugar with light brown sugar.

Milk is needed sometimes to bind the dough together. If you do not use oats & whole flours then you may not need to add any milk.

Check for doneness of cookies, when the top is firm and underside is slightly soft.

The time of bake would also depend upon the thickness of your cookies.

Conclusion – The cookie has just the right amount of sweetness and crunch. Kids and adults both will like it and I must own that it is very worthy of competing with well-known brands ever present in the shopping-mall & can demand possibly higher price than them.
