3 Easy To Make High Tea Sandwich Recipes

High Tea’ is the term used to describe a meal that is taken in late afternoon or early evening. The meal consists of tea, bread and butter and any cooked dish. While we’ve already listed 4 choicest recipes for a high tea buffet, typically, Sandwiches are integral to high tea as well.

1. Simple cucumber tea sandwich

This is one of the simplest recipes and can be prepared within five minutes. To make four sandwiches you need-


  • 2 slices of white bread

  • Cheese or mayonnaise

  • Sliced cucumber

  • Salt to taste

  • Ground pepper (fresh preferably)


  • Trim the edges off the bread

  • Evenly spread cheese and /or mayonnaise on the bread

  • Arrange cucumber slices

  • Sprinkle salt and pepper to taste

  • Give a dash of lemon for the tangy taste

  • Complete the preparation by overlaying with 2nd bread slide

  • Slice diagonally / any fancy shape and serve

2. Prawn dill sandwich

  • 2 slices of bread

  • mayonnaise

  • chopped dill

  • cooked and deveined prawn

  • dash of lemon juice

  • Ground pepper.


  • Trim the edges off the bread

  • Spread butter / mayonnaise evenly on the bread

  • Mix chopped dill, prawn, and dash of lemon juice and plop it on a single slice

  • Spread and close with the 2nd slice of bread.

  • Slice up and serve

3. Smoked salmon cucumber sandwich

I have heard from my fish-eating friends that once having tasted smoked salmon, it is irresistible to stick to one serving. But, begin a vegan, I really don’t know. May be you can vouch for this recipe.


  • Cheese spread

  • Cucumber slices (peel the skin off before slicing)

  • Bread slices (wholegrain preferably)

  • Smoked salmon


  1. Spread cheese on bread slices evenly.

  2. Layer the sandwich in the following order

    • Smoked salmon

    • Sliced cucumber

    • Ground pepper

    • Salt to taste

    • Smoked salmon

  1. Lastly, keep the bread slice on top of the filling to complete the sandwich
