Summer is here! And even though the unbearable heat is something that we could happily live without; with it comes, something that tingles our taste buds, satisfies our longing for something delicious while keeping us hanging and craving for more. Yes, I’m talking about none other than the king of all fruits, Mango!!!
Slice them up, make a milkshake, make the very popular aamrakhand or just grind it in a mixer for some Aamras. However wonderful a mango might taste in its original form or in these very common varieties, it’s time to try some dishes that are not too mainstream and will definitely bring out the true essence of how wonderfully multi-purpose mangoes can be.
In a mood for something cool, creamy and mangolicious? Then why stop at Mango Lassi? Take a step forward and try something more innovative, even tastier and a lot more fun to make! Here’s a quick and easy recipe for Mango Lassi Popsicles that will make you forget your most favourite ice cream even!
½ litre Mango Nectar
1 1/3 cup sour cream
1 ripe mango, peeled and chopped
1/2 cup granulated sugar
1/4 teaspoon ground elaichi
1/2 cup chopped pistachios
Prep Time: 5- 10 minutes
Freezing time: 2-3 hours
Pour the all ingredients, minus the pistachios, into a blender. Cover and blend until mostly smooth. Pour the mixture into Popsicle molds, or small paper cups.
Freeze for one hour. Then push a Popsicle stick into the center of each pop, sprinkle with pistachios, and press gently.
Place back in the freezer until solid for 2-3 hours and your delicious treat is ready!
A refreshing and ready to consume drink is a must during summers, especially when you get home from a hot summer afternoon. Here’s a quick recipe for a rejuvenating drink that will make you forget about the cruel sunny afternoons.
3 cups fresh mango, peeled and cut into large chunks
1 cup sugar
1/2 cup juice from 4 to 5 limes
10 lightly crushed elaichis
1 cup mint or basil
thinly sliced limes and mint for garnish
Prep Time: 10- 15 minutes
Put mango and lime juice in a food processor and grind until smooth.
Strain the mixture into a bowl and refrigerate it
Combine sugar, 1 cup water, lime zest, elaichi, and mint in a small saucepan over medium-high heat. Bring to a boil, then lower heat and simmer until a thin syrup forms.
Pass the syrup through a strainer into a bowl and refrigerate it
When ready to serve, combine the chilled mango-lime juice and mint simple syrup according to your taste preference.
Add some soda, pour into glasses, use mint leaves and lime slices for garnishing and your refreshing summer saviour drink is ready!

Prep Time: 20-25 minutes
Freezing Time: 3-4 hours
1. Line a loaf pan or a cake mould with foil and plastic wrap, allowing sides to hang over.
2. Spread softened raspberry sorbet in pan. Freeze until firm.
3. Puree mangoes, coconut milk, sugar, and lime juice in blender. Spread on top of frozen sorbet. Top with single layer of 1/2″-thick slices of angel food cake. Cover with plastic wrap and foil. Freeze until firm.
4. Remove cake from freezer and your scrumptious dish is ready to be devoured.
