Crispy lamb Beijing style is a must try dish for all lamb-lovers. The crispiness of the meat and the sourness of garlic make it a palatable delight. It might not be one of the best looking lamp dishes but its taste is certainly unbeatable.

Ingredients:

  • 250 gm ( 10 oz) lamb, finely shredded

  • 20 gm ( 1 oz) carrot, diced

  • 20 gm (1 oz) capsicum, diced

  • 25 gm (1.2 oz) onion, diced

  • 25 gm (1.2 oz) spring onion, diced

  • 1 tablespoon oil ½ teaspoon ginger, chopped

  • ½ teaspoon garlic , chopped

  • 1 ½ teaspoons chilli paste

  • 50 ml (1.5 fl oz) tomato ketchup

  • 1 teaspoon sesame oil

  • ½ teaspoon salt

  • ½ teaspoon sugar

For the Marinade

  • ½ teaspoon salt

  • 1 tablespoon corn-flour

  • 1 teaspoon oil

For Frying

  • 2 tablespoon corn-flour

  • 250 ml (8 fl oz) oil

Method:

1. Marinade the lamb for at least 2 hours.

2. Coat it with additional corn-flour and deep-fry till golden brown and cooked.

3. In a separate pan, heat oil, sauté ginger, garlic, chilli paste, add the meat, toss, add diced vegetables and toss again.

4. Add tomato ketchup and seasoning.

5. Finish with sesame oil and serve hot.
