Two Interesting Desserts For A Christmas Dinner

1. Bebinca

Bebinca is a scrumptious classic Christmas dessert from the land of beautiful sand beaches – Goa. This layered dessert is also known as Bebinka or Bibic. This Christmas you must try your hand at preparing this pudding like sweet with multiple layers. Here’s how you can master the art of preparing this recipe:

  • Thick coconut milk – 250 ml

  • Separated Eggs – 6

  • Refined Flour – 175 g

  • Ghee – Half cup

  • Sugar – 200g

  • Nutmeg Powder – 1tbsp

  • Cardamom Powder – 1tbsp

  • Almond Flakes

  • Vanilla Essence

  • Salt – A Pinch


  • Preheat your oven to 180°C for almost 15 minutes before working

  • Carefully grease a loaf pan or round tin using ghee

  • In a mixing vessel, combine sugar and coconut milk until the sugar dissolves

  • Add egg yolk and beat well (one at a time)

  • Add the flour along with salt and ghee and beat well

  • Now pour almost half cup of this batter into the baking tin and bake for 25 minutes

  • Generously brush ghee over it and sprinkle a small amount of cardamom powder along with vanilla essence

  • Bake again for about 15 minutes and then again create a layer as above

  • Keep adding 3-4 more layers in a similar fashion

  • For the last layer spread ghee and sprinkle nutmeg powder, cardamom powder and vanilla essence along with almond flakes and bake for at least 20 more minutes

  • Allow the cake to cool completely and unmould the pan by gently tapping the mould

  • Slice it while still warm


Serve Bebinca with a dollop of ice-cream of your favourite flavour.

2. Yule Log Cake

For The Sponge:

  • Caster Sugar – 100g

  • Self Raisng Flour – 75g

  • Eggs – 4

  • Cocoa Powder – 40g

For Chocolate Icing:

  • Chocolate – 250g

  • Double Cream – 450ml

  • Jam – 4tbsp

  • Icing Sugar


Sponge Preparation:

  • Preheat your microwave to 180°C and lightly grease a swiss roll tin and line with a baking parchment or greaseproof paper

  • In a large mixing bowl whisk eggs and sugar well using an electric whisker until the mixture becomes frothy and light

  • Add cocoa powder and flour and very gently fold in using a spoon

  • Pour this mixture into a lined tin

  • Bake for almost 10 minutes until the mixture becomes a little spongy

  • Place a larger piece of baking parchment paper on your work platform and invert the cake onto this paper

  • Carefully remove the lining paper from the bottom of the cake and trim the uneven edges using a sharp knife

  • While the cake is still warm, roll it up using the paper (leave the paper inside) and let it cool for sometime

Icing Preparation:

  • Carefully melt the chocolate as well as half the cream in a double boiler

  • Keep it in the refrigerator to cool and thicken

  • Whip well the remaining cream

1. Now uncurl the swiss roll that you prepared and carefully remove the butter paper

2. Now spread almost one-third of the icing over this cake and top it with whipped cream

3. To make it look more interesting, cut the cake at an angle (to make it look like a branch)

4. Transfer it to your serving dish and cover it with melted apricot jam (or any other flavour of your choice)

5. Also, you can cover the entire cake with the remaining icing and dust with icing sugar
