Cabbage Kofta – Cook this easy Assamese dish in few easy steps!

Speaking about Koftas, what comes to your mind? Malai-kofta right? No! We will be adding a little healthy twist to this recipe and it won’t be calorie filled like the cream filled malai koftas. This lip-smacking rich saucy and spicy curry dish is favored by the Assamese community because it is yum in taste, easy to prepare and nutritious too. Yes, Beat that!

So if you have a knack for experimenting, let me introduce ‘cabbage koftas’ to you. Basically, they are fried dumplings made into curry with stuffed besan or vegetables like cabbage, carrot, beetroot and much more.

The bad news is this recipe is a tad-bit time consuming but the good news is, it’s worth it!

Let’s start with the ingredients first

For the cabbage balls

  • 1 small shredded Cabbage

  • 2 small Onions that are minced finely

  • 1/2 tsp Chilli powder

  • 1 tsp Garam Masala powder

  • 1 cup Besan

  • A pinch of Baking powder (for puffiness)

  • Salt to taste

For the curry

  • 2 large Onion chopped finely

  • 2 large Cloves chopped finely

  • 2 Cinnamon sticks

  • 2 Cardamom pods

  • 1 medium sized ginger

  • 1 tsp Jeera

  • 1 tsp Coriander seeds

  • 1 tsp Poppy seeds

  • 1 tsp Cashew nuts

  • Green chillies (according to your preference)

  • 4 small Tomato chopped finely

  • 1tbp of Yogurt

For garnishing

  • 1 medium sized chopped coriander leaves

  • Few drops of cream or cashew nut paste

Method

1. Mix all the kofta ingredients and form a thick batter and shape out the balls

2. Heat refined or olive oil in a pan

3. Start deep frying the balls few at a time until a little crisp

4. Drain the oil from the balls and keep aside to cool

5. Heat more oil in a different pan and add the jeera, coriander and the poppy seeds. Wait till it bursts.

6. Add onion to the sprinkling seeds and fry until golden brown

7. Make a paste of cloves, cardamom, cinnamon, ginger, cashew nut and tomato

8. Add this paste to the onions and fry a little

9. Add 1 tablespoon of yogurt and mix well

10. Add salt, a little water to make a thick gravy and bring the mixture to a low flame

11. Add the deep fried koftas stir, and heat a little

12. Serve hot with chapati or rice
