1. Eggs in Pepper Cups

Ingredients:

  • Bell Peppers – 4

  • Large Eggs – 4

  • Kosher Salt

  • Pepper (Grounded)

  • Fresh Herb (Finely Chopped)

Directions:

  • Preheat your microwave to 350°F

  • Using a sharp knife, slice the bottom of each pepper (to form a shallow cup) or if you want, you can slice the pepper into thick rings

  • Do not throw away the tops of peppers

  • Place the peppers on a baking sheet and crack one egg into each of the cups or rings

  • Butter – 1 tbsp.

  • Eggs – 2

  • Bacon (Cooked and Crumbled) – 2 strips

  • Cheddar (Shredded) – 2 tbsp.

Directions:

  • Take a baked potato and using a sharp knife cut off the top third (sideways)

  • Using a spoon, carefully hollow out the potato to make a bowl

  • Now, in each potato bowl place almost half a tsp. butter and then crack an egg into it

  • Top it with bacon, cheddar cheese and parsley along with the salt and pepper

  • Scoop out a little pulp from the avocados to make a bowl
